    Default Anyone have a lowfat oatmeal cookie recipe?

    I have alot of oatmeal and I'm thinking I'll bake and freeze a bunch of cookies. They don't have to be delicious, just edible and lowfat.
    And I want to use regular ingredients. Trying to stay away from the healthfood store, because I always spend too much money there.
    Some sort of oatbar would be okay too. I want to bring them to school so that I don't end up at the vending machine.

    How about this nanny?Worth a try?
    Ingredients
    •1 cup all-purpose flour
    •1 cup quick-cooking oats
    •1/2 cup sugar
    •1/2 teaspoon baking powder
    •1/2 teaspoon baking soda
    •1/2 teaspoon salt
    •1/2 teaspoon ground cinnamon
    •2 egg whites
    •1/3 cup corn syrup
    •1 teaspoon vanilla extract
    •1/3 cup raisins

    Directions
    •In a medium bowl, combine the first 10 ingredients; mix well. Stir in raisins (dough will be stiff). Drop by tablespoonfuls onto baking sheets that have been coated with cooking spray. Bake at 375° for 8-10 minutes or until lightly browned. Yield: 2-1/2 dozen.

    Thanks! Looks good except I don't have corn syrup, I wonder what will happen if I just skip it?

    I don't know what would happen if you left it out.In the past I have not been very successful in leaving ingredients out of recipes.This is an alternative:
    If light corn syrup is not available, you can substitute a sugar syrup made with 1-1/4 cups sugar and 1/3 cup water, boiled together until syrupy

    If you left out the corn syrup the batter would be very dry, not to mention that it would be missing some sugar which helps hold on to moisture.

    I wonder if applesauce would work. I've seen it suggested in lowfat recipes.

    I've heard, but have not tried, that you can substitute Splenda for sugar with the same measurement. So, you can use your usual recipe, but subsitute Splenda for sugar.

    My mother does this some times and if done correctly can give a nice, soft texture.

    Trying to make a something that I can carry with me so I don't waste $$ and calories at the vending machine.
    So I used a cup of w.wheat baking mix, cup of oats (based on IMSAVED's recipe...thank you)
    1/3 c. (ish) of sesame seeds, flax seeds, sunflower seeds, protein powder, raisins, choc. chips, coconut, cocnut oil, walnuts
    chunk of ginger root
    squirt of molasses
    1 egg
    1 banana
    vanilla, cinnamon
    drop of milk
    tablespoon of white sugar
    blended banana, ginger, nuts and seeds,cocnut, and oats in Ninja
    Cookies came out pretty good, but not perfect.
    Didn't have applesauce.
    If anyone has any suggestions?
